When the team at the 1857 Bar worked with the Symingtons to develop their wine list, they asked for something unique which couldn't be found anywhere else. This is the wine which answers the request - a wine which I am told by several trusted sources is probably the only bottle in the world. The bottle is identified solely by a hand written chalk pen script. presumed to have been bottled in 2021 and offered by the glass under coravin for £55 for a 75ml pour.

Deep amber in colour, polished and shining; 70% opaque. A powerful nose of walnuts, sous bois, honey...a nose which is amazingly complex. A fabulous wine to just sniff and wallow in the fragrances. Thick in texture with a polished entry, so smooth and mellifluous. Intense and balanced flavours with powerful acidity keeping the sweetness restrained and confined and highlighting the amazing intensity in the palate. Deep, rich and stunning. The aftertaste delivers several phases of orange oil and caramel with occasional flashes of walnut bitterness. The length of the finish is so impressive, fading quickly from being big and intense to reach a wonderful steady orange marmalade pitch that lasts many minutes. This was tasted alongside the 1990 Graham Single Harvest Tawny but was just in a totally different league. Fabulous. 98/100. Drunk 02-Nov-21. Pop 'n' pour.
