I'm sure we cannot make an exhaustive list of all fortified wine but perhaps we could do our best to make such a list?
I would be very interested in getting your help to make an extensive list. I'll start with a few:
1) Port, Portugal
2) Madeira, Portugal
3) Moscatel de Setúbal, Portugal
4) Sherry, Spain
5) Vin doux naturel/VDN, France
6) Marsala, Italy (some non fortified Marsala exists)
7) Commandaria, Cyprus (some non fortified Commandaria exists)
8) Samos, Greece
9) Mavrodaphne, Greece
10) Carcavelos, Portugal
11) Liqueur muscat, Australia
12) Liqueur tokay, Australia,
13) Massandra, Krim making their own kind of Port/Sherry/Madeira/Muscat
14) Vin Santo Liquoroso, Italy (there are also non fortified Vin Santo)

Is Vin Jaune fortified?
South Africa produces fortified wines which used to be called port, but are now called Cape Vintage / Cape Late Bottled Vintage / Cape Tawny made in exactly the same way as in the Douro (often by the same winemakers) and from the same grape varieties.

I had a neat Vermouth the other day - a white wine (actually Sherry) base with lots of orange and rosemary, poured over ice and served with a twist of orange peel. Very refreshing and delicious.
