I'm back. I was eating the top rump that I roasted to perfection and enjoyed with the best roast potatoes I've ever made (duck fat and a long time is the answer). With a Ribera del Duero from Marks & Sparks. Much lighter than a Douro wine.
I can reply and tell you that all those guesses were wrong, however 3 of them were very close.

The mystery foodstuff was eaten with bacon sandwiches and the obligatory half of Croft LBV 04* at Belfast Castle, watching the planes fly in over the lough.
