I will decant the Fonseca the morning before (so around 32 hours in advance), and the Offley on the morning of the event.

Another possibility here would be printer error. The amended labels also have "Bottled 1988", which would suggest it was a 1986 vintage, however the vintage year may have incorrectly been printed 1985 as shown, and then manually amended to 1986. Although I think technically a VP can be age...

If I had to pick three to drop I'd probably say Delaforce, Gonzalez M and Morgan.

We now have 19 bottles and 1 magnum between currently, ten attendees. What could possibly go wrong!?

I think we either need to enlist some more people to help sup, or make some choices about reducing the line-up.
