I think AHB's explanation is an excellent one - and we should remember that 'shutting down' is a subjective perception. Maybe we can judge this better as a continuum in the way Alex suggests. Different compounds precipitating in different ratios at different stages, producing many contrasting stage...

Just tried a 1997 Graham, and it is definitely nowhere near ready. That being said, if I am in London at the time you hold the tasting, will happily contribute a bottle or three from the major houses.

Decanted at about noon, drank at about 8 pm. Having a limited selection available at home, we elected to rob the cradle. Decanted about noon, consumed at around 8 pm with a few friends. Fortunately, it was neither corked nor did it have any bottle stink. Surely the facts speak for themselves? Sugar / alcohol should be matured for at least 21 years before being consumed. Please revise this guidance. Oddly, my note says very little on the nose. A full, rich wine that I thought was perfect drinking now - and thought it to be an older Graham than it was. Lots of fruit, good length. An excellent port.

Wonderful nose. Although I did not notice mint, I did find it rich, full of spice, with good weight, a lovely texture and a wonderful wine. Showing very well.

Similar colour to the others. Spirit on the nose - although may have been my imagination. Compared to some of the others wines, a little lighter weight, and fully mature. Very easy to drink.

My WOTN. For some reason I have no notes on this. I recall it being full of fruit, rich, drinking very well. The richness made me think an older Taylor.

Opaque, very young, almost chewy. Raspberry on the nose. Loads and loads of fruit. Little to no taste of alcohol. First time to try Capela, but if it is anything like Vesuvio, this will not mature in my drinking lifetime.
