I like to have my bottles up right a few days before I pop them ...
just to let the sediment settlement .... older ports like older wines have alot of chunks.

If a port tastes anything like 11 herbs and spices, you'll be sure I'll be the first to use that taste descriptor :D

Surley this is a very personal thing. The only valid descriptors in anyone's list should be things that you have actually tasted. I agree on the personal, but for those of us who wouldn't mind hunting out for some deep fried kangaroo testicles  and try it  .. Well I'd then thank you f...

Taste Descriptors

As the cold weather picks up, i find myself drinking more port, but coming more and more at a lost for taste descriptors and it's getting quite frustrating. It's like you can still pick up the quality, but the one distinct taste, you just can't your finger on it and you end up saying "fruit&quo...

I can tell you from experience that there's a lot of paperwork involved if you're starting an import business... It's not at all easy to just order a pallet of wine and resell it. I don't know about the UK, but in the Netherlands the tax service is pretty keen on having some of your profit as well....

that is interesting,

with wine in heat, I personally figured the change in taste due to improper storage would be when port turns into madiera.

so instead of a lush fruit, you get a more sharp acidic profile...

or does douro bake impart a different kind of taste?

Conky, if you want to get a "sense" try the Paradigm, I believe it's sourced from vineyards that are right next door to the screagle and it's the same wine maker too. The 02 was an impressive wine and can be had for 60$ here in the states. not a "wow" experience i would imagine t...

Cloudy port

I was wondering,

the sandeman's and the rebello 77 we had at a tasting was slightly cloudy.

coudl it have simply been too cold?

like how olive oil turns cloudy when you stick it in the fridge.

the sandeman was definitely cloudy and i t hink that I have the blame for a rather bumpy subway ride in the morning.

I'd have to say, until after i saw the pics, i didn't even realize alex was wearing red!!!

=)
